The pourover
Our complete lineup of seasonal micro-lots is permanently available for both retail purchase (100g whole-bean bags) and fully operational for pour-over extraction at the Akasaka Factory Bar. To perfectly liberate the unique genetic potential of each variety, every single option is meticulously extracted using our custom-profiled mineral water and a precision-aligned Mahlkönig EK43 (rare pre-2015 cast burrs). Each cup is executed strictly under our official 1:17 - 1:19 ratio and 5 to 6 pulse pouring architecture—crafted exclusively by our highly experienced baristas who have thoroughly mastered their extraction dynamics at the Kitanomaru sanctuary to deliver an uncompromised, crystalline clean cup. We leave zero variables to chance.
The Espresso
A radical re-engineering of the extraction grid. We bridge the heavy, tactile density of traditional Italian espresso with the pristine clarity and delicate fruit of light-roast specialty coffee. Anchored by our signature blend, "Timeless," we pre-mix elite green beans from Kenya and Brazil at a precise 1:1 ratio prior to roasting, synchronizing their cellular structural development under unified heat variables. This intense fluid architecture yields a velvety, heavy-bodied emulsion while liberating a remarkably clean, explosive flavor complexity—redefining the baseline of modern espresso. Available in our daily rotation, alongside curated seasonal blends.
A Curated Experience
Our menu is an ongoing exploration of fluid and flavor. We build upon a foundation of classic espresso and precision pour-overs, meticulously dialed with custom-profiled water. Beyond the bean, our curiosity expands to rare artisanal Japanese teas from Yoshida Farm, heavy-hitting craft beers from Teenage Brewing, and Yamasauvignon wild grape juices. Our innovative cocktails are curated exclusively with elite native spirits—such as our signature Espresso Martini re-engineered with premium Kawabe rice shochu and calculated citrus.
Our food is a playful yet cold-blooded experiment in gastronomy. We simultaneously celebrate the raw contrast of sophisticated, avant-garde pairing plates and reimagined comfort textures. From a strictly curated avocado-salmon open sandwich laced with Iwaizumi yogurt and fresh fennel, to a complex, near-vegetarian assembly of roasted myoga (Japanese ginger), roasted baby corn, and Shinshu Nagato Ranch Gouda finished with fresh shiso and cold-pressed olive oil. Even our tuna-mayo and pizza toast are subverted—deliberately re-engineered with a nod to the nostalgic, heavy-hitting textures of classic domino-style comfort.
