The Concept: Modern Light Roast, Classic Italian Soul This signature espresso blend was born from a desire to bridge two worlds. We wanted to create a coffee that showcases the vibrant, fruit-forward qualities of a modern specialty light roast, while capturing the comforting, nostalgic soul of a classic Italian espresso bar. It is so perfectly balanced that even our Italian staff members recognize a taste of home in the cup.

The Craft: 50/50 Pre-Blended Roasting The secret to this blend lies in its composition and roasting approach. We combine 50% Kenyan and 50% Brazilian coffees as green beans before they enter the roaster. By applying a highly specialized, bespoke roast profile to this mixed batch, the beans integrate seamlessly. The result is a light roast that extracts beautifully, producing an incredibly rich, thick crema that is rarely seen in modern specialty light roasts.

The Tasting Experience The shot is deeply satisfying, combining heavy comfort with elegant fruit notes:

  • The Foundation: A dense, syrupy Chocolate body with an impressively rich crema.

  • The Heart: Bright, sweet, and classic Orange citrus notes.

  • The Finish: A lingering, elegant hint of tropical Guava.

Degassing notice

We recommend degassing this coffee for at least 35 days, up to 70. Our coffees often peak around 45 days and 60 days post-roast and are best enjoyed from then until the 90 day mark.

Our omniroast style leads to abnormally long degassing times, but just trust us, once your coffee is degassed properly, you're in for a treat.

*Please make sure not to vacuum or freeze the coffees while it's degassed enough.
