The Aesthetic of Acidity and Evaluation
Our quality control is an uncompromising safeguard, guided by our deep dedication to vibrant structural acidity and an endlessly clean, immaculate aftertaste. Every single batch is evaluated using customized water meticulously calibrated to a precise mineral blueprint (KH 40ppm, GH 68ppm, and TDS 100ppm).
We grind each lot exclusively with the Timemore Sculptor 078 (setting 7), preparing three independent cups per roast batch steeped at a precise 95°C. Every cupping session spans a full 50 minutes, allowing us to carefully monitor the flavor evolution and identify even the slightest roasting inconsistencies as the temperature drops.
To ensure our quality remains exceptional and stable over time, each batch undergoes a multi-layered evaluation immediately post-roast, followed by a second strict assessment after a 24-hour resting window. We leave zero variables to chance.

To achieve an exceptionally clean, crystalline cup, our green coffee undergoes a rigorous, multi-tiered sorting process before roasting. Every single lot is first analyzed by a state-of-the-art AI deep-learning optical sorter. Utilizing ultra-high-resolution dual cameras, this advanced technology eliminates nearly all physical defects, such as insect damage, fungus, and foreign debris.
This mechanical precision is then immediately followed by a meticulous manual sorting process. By harmonizing the accuracy of artificial intelligence with the dedicated care of the human hand, we remove any remaining imperfections. This ensures that only the purest, untainted expression of the terroir remains, ready to be shared with the world.
