The Discovery Out of pure curiosity, we experimented by applying an espresso-specific roast profile to the El Morito Yellow Caturro. The result was absolutely marvelous. It unlocked a completely different aspect of this coffee, shifting it into a richer, deeply aromatic dimension that stands entirely apart from our standard omni-roast.

Even on the cupping table, this profile stunned us with its incredible clarity and rich, tactile complexity. It was simply too exceptional to keep behind closed doors—this is a unique roasting expression that we genuinely wanted to showcase to our community.

The Tasting Experience This specialized roast transforms the exotic nature of the Yellow Caturro, bringing forward dense fruit and sophisticated aromatics:

  • The body: A rich, juicy raspberry.

  • The note: hints of cardamom.

  • The floral: delicate finish of daisy.

Brewer's Note: While our omni-roast highlights the pristine, high-altitude terroir of the farm, this Espresso Roast offers a rare, highly tactile, and beautifully structured shot. Thanks to its exceptionally high solubility, this profile allows you to pull a shot at a classic espresso ratio (1:2, such as 18g in to 36g out)—a remarkably rare experience for such a dense, high-grown coffee from an artisanal producer. It is a perfect fit for those looking to experience an entirely new side of El Morito.

Degassing notice

We recommend degassing this coffee for at least 35 days, up to 70. Our coffees often peak around 45 days and 60 days post-roast and are best enjoyed from then until the 90 day mark.

Our omniroast style leads to abnormally long degassing times, but just trust us, once your coffee is degassed properly, you're in for a treat.

*Please make sure not to vacuum or freeze the coffees while it's degassed enough.
