We are proud to introduce the Panama-Eth47, a rare gem curated by our sourcing partner, Jonathan Vaz Matias (JV).
Hand-carried from Costa Rica by Jonathan himself and cultivated exclusively for us at Corpachi Farm, this lot represents a true collaboration of terroir and craft. Given the coffee’s delicate yet remarkably dense bean structure, we have revisited our signature 2021/2022 roast profile to honor its complexity.
In the cup, this coffee boasts a refined, sparkling wine-like acidity. It is a vibrant expression of both the farm and the cultivar—expect a brilliant opening of star fruit and honeysuckle, rounded out by a lush, mango-like sweetness.

Degassing notice
We recommend degassing this coffee for at least 35 days, up to 70. Our coffees often peak around 45 days and 60 days post-roast and are best enjoyed from then until the 90 day mark.
Our omniroast style leads to abnormally long degassing times, but just trust us, once your coffee is degassed properly, you're in for a treat.
*Please make sure not to vacuum or freeze the coffees while it's degassed enough.
