Degassing notice
We recommend degassing this coffee for at least 35 days, up to 70. Our coffees often peak around 45 days and 60 days post-roast and are best enjoyed from then until the 90 day mark.
Our omniroast style leads to abnormally long degassing times, but just trust us, once your coffee is degassed properly, you're in for a treat.
*Please make sure not to vacuum or freeze the coffees while it's degassed enough.

Apollon's Goldは、2024年8月13日に設立7周年を迎えました! 今回の記念ブレンドは、スタッフ総出で予算度外視で作っており、社内コンペを経て、このObraje Geisha、Hamasho、Kokoseを混ぜるという非常に贅沢なブレンドが採用されました。非常に明るく力強い味わいの中に、熟したキウイのような甘さや、微かなナチュラルプロセスの発酵感が、ロゼシャンパンのような印象を与えます。
Mark our 7th anniversary with a blend that embodies the essence of our journey and passion for coffee. This exceptional blend, crafted by the entire team at Apollon's Gold, combines three meticulously selected coffees from our 2024 lineup — one from Colombia and two from Ethiopia — creating a harmonious and vibrant celebration of flavor.
From Colombia we selected El Obraje Geisha, one of our favorite classic washed coffees that shines with its exquisite juicy fruity notes. It offers a remarkable balance of super bright acidity and fruity undertones, which sets a sophisticated and delicious foundation for the blend. And from Ethiopia, we chose Hamasho and Kokose, two of our recent favorites, both being 74158 coffees. Hamasho brings a distinct candy-like sweetness alongside its peach and lemon-like acidity, enhancing the complexity of the blend. Kokose's natural process brings a fragrant lavender and succulent mangosteen to the mix, contributing a deep floral aroma and elevating the acidity, which turns the blend up to 11.
Together, these three coffees create a vibrant tapestry of flavors. This blend offers a super bright acidity while remaining sweet and juicy alongside a unique fermented taste that results in a layered, complex, and delicious experience akin to biting into a fresh fruit. Each sip reflects our collective appreciation for the specialty coffee world's rich traditions and innovative spirit. We hope you enjoy it.
